The Prunotto Mariangela organic Yellow Pesto is a ready-to-use squash and curry sauce.
‘Pesto’ is an Italian word that translates ‘crushed’, and the recipe can be used to crush different kinds of vegetables (not only basil!).
The organic Yellow Pesto is a delicate cream with a spicy after-taste reminiscent of curry.
The organic Yellow Pesto is a versatile sauce that can be put to many uses.
- It is an excellent pasta sauce. To use it with pasta, dilute it with a little of the water used to cook the pasta before mixing; then pour it on the drained pasta and mix well. It will take 2 or 3 teaspoons of pesto per person. If desired, add a drizzle of raw extra virgin olive oil.
- It is great also to prepare delicious croutons – spread it on toasted bread for a tasty appetizer – and paired with white meat – try adding it while cooking: the meat will absorb the full flavour of the sauce -.

The Prunotto Mariangela organic farm is based in Alba, at the heart of the Langhe region, in Northern Italy.
